Blueberry Muffins

These muffins are so buttery, airy, and perfectly moist!
Ingredients:
3 cups and 1 tablespoon AP flour
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups plain yogurt
2 eggs
8 tablespoons melted butter
1 1/2 cups fresh or frozen blueberries (Don’t thaw if frozen)
Heat oven to 370 degrees. Prepare two 12 cup muffin tin.
In bowl of stand mixer, whisk 3 cups flour, sugar, baking powder, baking soda, and salt.
In medium bowl, whisk yogurt and eggs until smooth.
Attach paddle to stand mixer. Add yogurt mixture to flour mixture and combine until no dry flour is visible. Stir in the melted butter. Add a tablespoon of water if needed.
In small bowl, toss blueberries with remaining tablespoon of flour. Gently fold into batter. Do not overmix.
Divide batter evenly among muffin cups. Bake until golden brown and toothpick inserted in center comes out clean, 20 - 25 minutes. Let cool for 15 minutes then enjoy!
