Gluten Free Cinnamon Sugar Muffins

Muffin is better than a good pun!

I just recently went gluten free and started experimenting with gluten free flour. These were a big hit in my family. They were gone in just a day! I would say these are even better than some muffin recipes that aren’t gluten free!

Makes 18 muffins Prep Time: 10 minutes Cook Time: 18-20 minutes Total Time: 28-30 minutes

Ingredients:

3 cups Gluten Free Flour

1 1/2 cups Sugar

1 teaspoon Salt

4 teaspoons Baking Powder

2 teaspoons Cinnamon

2/3 cup Oil

2 Eggs

2/3 cup Milk

1 teaspoon Vanilla

Sanding Sugar to top muffins (optional)

Instructions:

  1. Preheat oven to 400 degrees Fahrenheit. Prepare muffin tin with liners and vegetable oil spray.

  2. Combine dry ingredients in a large bowl.

  3. Add wet ingredients and mix well until no dry flour remains.

  4. Fill muffin cups 3/4 full. Sprinkle sanding sugar on top of each. Bake 18-20 minutes until inserted toothpick comes out clean.

  5. Enjoy!
