Chocolate Cake
Let us eat cake!
Ingredients:
Cake-
2 cups AP flour
2 cups sugar
3/4 cup cocoa powder
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon espresso powder
1 cup milk
1/2 cup browned butter
2 eggs
2 teaspoons vanilla extract
1 cup boiling water
Frosting-
1 cup softened butter
1/2 cup cocoa powder, sifted (Plus extra for garnish)
5 cups of confectioners sugar
1 teaspoon vanilla
4 tablespoons milk
Frosting- In stand mixer on medium speed, whip the butter until creamy.
Add the cocoa powder, sugar, and vanilla on low speed. Increase to medium and slowly stream in milk.
Scrape sides and whip again until light, fluffy, and smooth, 1-2 minutes. Add more milk if the frosting is more thick than your liking.
Cake- preheat oven to 350 degrees. Line two 9-inch round pans with parchment paper and canola oil spray or butter.
Whisk flour, sugar, cocoa, baking powder, baking soda, salt, and espresso powder in a large bowl until well combined.
Brown the butter by adding it to a saucepan over medium-low heat and stir until melted. Turn up the heat to medium. Stir continuously. The butter will begin to foam and sizzle around the edges then turn golden brown after 5-7 minutes. Add milk, brown butter, eggs, and vanilla to flour mixture and mix until well combined. Carefully add boiling water until well combined.
Distribute batter evenly between 9-inch pans and bake 30-35 minutes until a toothpick inserted in the center comes out clean.
Frost cake and sprinkle cocoa powder on top. Enjoy!
