Quiche

My parents used this recipe in their cafe and I thought it was too delicious not to share!

Serves 10

Ingredients:

10 medium eggs

2/3 cup pepper jack cheese, shredded

1 1/3 cups colby jack cheese, shredded

2 cups cottage cheese

1 cup chopped green chili peppers

1/3 cup all purpose flour

2 1/3 tablespoons baking powder

4 tablespoons butter, melted

A dash of salt and pepper

Note: If you don’t have the specific cheeses handy, you can use cheddar.

  1. Preheat oven to 375 degrees. Whisk the eggs in a large bowl. Add the rest of the ingredients and mix until combined.

  2. Pour the mixture into a 10” greased pie tin and bake for 10 minutes, rotate and reduce to 325 for 10 minutes, rotate and reduce to 300 for 20 minutes, rotate and bake for another 20-30 minutes until edges are golden and center is set. This method ensures that the center doesn’t set too soon and the outside doesn’t burn, ensuring a perfectly cooked quiche.
