Pumpkin Bars
If your sweet tooth is calling…
These pumpkin bars are delicious and addicting, they’re a great fall treat! We used to sell these in the restaurant that my parents used to own.
Cookie bottom:
2 1/2 cups flour, all purpose
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves, ground
1/2 teaspoon salt
1/2 cup butter, unsalted
1 1/2 cups sugar
1 cup pumpkin puree
1 egg
1 teaspoon vanilla
Pumpkin Pie Top:
15 oz pumpkin puree
14 oz sweet, condensed milk
2 teaspoon cinnamon
3/4 teaspoon ginger, granulated
1/2 teaspoon vanilla
1/3 cups egg
1/2 teaspoon nutmeg
Cookie Bottom: Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt. Set aside.
Cream butter and sugar. Add pumpkin, egg, and vanilla. Beat until creamy.
Mix in dry ingredients
Bake 350 degrees for 15-20 minutes
Pumpkin Pie Top: Whisk pumpkin, condensed milk, and spices in a bowl. Whisk in egg. Pour into prepared crust.
Bake for 45-55 minutes until filling is set. Rotate every 15 minutes.
