Mashed Potatoes

Serves 3

Ingredients:

1 lb. medium russet potatoes

1/4 cup milk

2 tablespoons butter

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon garlic powder

Instructions:

  1. Peel potatoes and quarter then place in a medium sized pot. Add just enough water to cover potatoes.

  2. Heat to boiling, then reduce heat. Cover and simmer 20-25 minutes, or until tender. Drain and return potatoes to pan.

  3. Mash potatoes in pan with a potato masher or fork until there are no more lumps. Add milk in small amounts, mashing after each amount is added.

  4. Add butter, salt, and pepper. Mash vigorously until light and fluffy. Add paprika, garlic, and chopped parsley if desired.
